I made chicken curry at home for the first time and it came out really good so I'd thought I'd share my recipe.
2 tsp Yellow Curry Powder
2 tsp ground Ginger
1 tsp Turmeric Powder
1 tsp crushed Caraway seeds
1 tsp ground Cinnamon
1 tsp black pepper OR 2 tsp white pepper if you don't want to see the flecks
1 tsp ground Mustard
1 tsp Paprika
1 tsp brown sugar
MIX ALL THAT SHIT TOGETHER!
3 tbsp olive oil
2 tbsp sesame oil (optional)
Pat of butter
2 small yellow onions, chopped
4 tsp minced garlic
1 1/2 cups chicken broth
1 cup drained diced tomatoes
A hearty splash of each Siracha and Soy Sauce
2 lbs of boneless, skinless, chicken breast, cubed
1/2 cup heavy cream
3 tbsp chopped parsley
In a large skillet with high sides, heat oils and butter and sauté chopped onion until it just starts to turn brown (about 4-6 minutes). Add garlic and sauté another minute, then add in spice blend and stir it around to coat. Pour chicken broth and stir gently, add tomatoes. Reduce heat, cover and simmer for 5-7 minutes.
Using a blender or immersion emulsifier, puree the tomato-onion mixture until smooth. Return to skillet, add siracha and soy sauce, stir, then add chicken. Bring to a simmer, cover, and cook until chicken is done. It was about 8-10 minutes for me because I like that 180F degree internal temperature.
At the last minute, stir in the heavy cream and serve over rice or in a bread bowl, or just eat it from the pan, I can't tell you want to do. ;3
That is all.

So Balan Wonderworld came out yesterday (3/26/21) and been getting a considerable amount of flak since the demo dropped.
Here's the thing....
why?
Youtube has exploded with rant heavy videos about 'glitches' and 'lag' and 'bad graphics' and I'm kinda wondering....
ya'll playing the same game?
I got Balan for both the Switch and the PS4 (don't have a ps5 yet, not too worried about it), and I'm having a blast. The colors are very pleasing with out being rough on the eyes. The character models are delightfully cartoonish. The frame rate is smooth. The platforming is enjoyable. The costume-kin powers are fun and interesting.
If I have a complaint, its less a complaint as much as a personal thing; the camera is kinda janky, but I grew up playing Super Mario 64. Camera-jank is something I can work around no problems.
Anyway, if you haven't picked up Balan Wonderworld yet, and enjoy a good platformer with fantastical and whimsical aesthetics that border on the surreal, check it out. Don't let the haters deter you from at least trying it out.
Ok, that's me done with the soap box. I'm out.
I have done nothing productive today except eat and drink water because of THIS!
When I saw the first trailer waaaaaaaaaaaaaaaaaaaaaaaaaaaay back last year I was SO! FUCKING! EXCITED! For this game!
And this morning I found out there's a DEMO!
GO PLAY IT!
So I've been riding that hype train all day.
For the record its amazing and I am even more stoked for the full release March 26th.
So 2020 is kicking all our asses right now in varying degrees, but we're half way through it now, so I figure its a good time to check in on everyone.
Make sure you lot are drinking plenty of water, try to get some sleep, take some self care time every day even if its only five minutes or so. Try to get some sun, look away from the computer for a bit, sit in silence or listen to a good song, have a cookie or an apple. Above all, don't stress out over the little things because they aren't worth the headaches. Share something good, even if its just something small. What're some of your little 'yay' moments right now?
And if your sitting there, reading this, thinking 'oh well I've got nothing worth talking about' you've got it all wrong. Something doesn't need to be BIG or EPIC to be celebrated. It doesn't have to be something that'll go down in history or change the world as we know it. If its something that's impacted YOU and YOUR WORLD then its worth sharing.
For example;
I've always struggled with my weight, ever since I was young. At my last doctor's visit, they said I've dropped 20lbs since my visit prior. When I got home, I dug into my closet for a shirt I bought years ago. It was so cute, I really wanted it, but the only size left was a medium.
I have never been a medium.
Until this year.
I ran around the house for a solid five minutes, screaming and cry MY SHIRT FITS MY SHIRT FITS with my sister cheering for me.
Speaking of my sister, she got accepted into her next tour of college, online classes of course, but that's still one step closer to that medical degree!
20 minutes ago, Mom and I went through our freezer to see what we needed to stock up on at the grocery store, and we found a loaf of chocolate chip pumpkin bread. I now have a warm slice with a cup of chai tea, my little piece of Fall in the unending slog that is summer.
*sip*
If I have a point, its this;
If we celebrate the little victories, the big ones don't seem so far apart. Be kind, be strong, and be at peace.
Tomorrow is another day.
